Although lately it seems that everyone is jumping on the Gluten free bandwagon, Celiac disease and its effects plague nearly 1% of Americans today. Currently, there is no cure or pharmaceutical drug that can limit the effects of this autoimmune disease, but hope might be on the horizon. A new study, presented at Digestive Disease Week in Chicago, found that a tablet with an enzyme called AN-PEP inhibits gluten absorption. The study was led by Julia König of the School of Medical Sciences at University of Örebro, Sweden. A true cure may be a few years away but Celiac sufferers may be that much closer to enjoying each of the 101 best pizzas in America.
